The 1991 Shafer Hillside Select Cabernet Sauvignon 750 ml is from the Stags Leap District region of California. Shafer Vineyards, from the Stags Leap district of Napa Valley, began in 1972 when John Shafer left his 23-year publishing career to start a new family venture in wine. With the help of his son, Doug, they replanted all the existing vines in the first years of business and, in 1978, crushed their first lot of cabernet grapes. Since their first release, Shafer wines have impressed enthusiasts and critics alike. They have received several perfect scores from Robert Parker for their 'Hillside Select,' and a list of other accolades that is too long to list. Known for its silky tannins, Shafer's Hillside Select is aged a full four years prior to release. There is no doubt, Shafer Vineyards is one of Napa's, and maybe even the world's, very best producers of cabernet sauvignon.

96 pts - Wine Advocate

["The 1991 Shafer Cabernet Sauvignon Hillside Select represents the beginning of a new era where sterile filtration was halted, after which the quality of most vintages soared to new heights. They may also have been picking riper fruit, as Napa Valley was in the midst of enjoying some fabulous vintages in what would turn out to be a Golden Era for its wineries. The 1991 is the finest Hillside Select of the early 1990s, although the 1992, 1994, 1995, 1997 and 1998 are close in quality. A stunning nose of licorice, vanillin, unsmoked cigar tobacco, crème de cassis and cedarwood are present in this multilayered, full-bodied, opulent, super-concentrated wine. It still possesses an opaque ruby/purple color to the rim. At age 23, this beauty is just hitting its plateau of full maturity. - eRobertParker.com, RP (12/2014)"]

["Rich and plush, deeply concentrated, with complex currant, coffee and cedar, and a twinge of stalky bell pepper and green bean. Finishes with tobacco notes and firm tannins. Turns herbal, but has a long way to go.--'81/?91 California Cabernet retrospective. Drink now through 2007."]
