Caymus Vineyards has been owned and operated by the Wagner Family since 1972. Using meticulous farming practices, such as leaving the fruit to “hang” on the vine unusually long and crop thinning to control sun exposure, the Caymus wines have abundant, velvety tannins and suppleness that will stun you. Their flagship wine, the Special Selection, is comprised of the very best barrels of the vintage and is not produced in difficult years. The Napa Valley cabernet is a bit less precocious, but still big and age worthy. Caymus has been featured by many prominent reviewers, receiving the very highest accolades possible from each agency. (15.4% alcohol): Bright, full medium ruby. Black raspberry, bitter chocolate and licorice on the nose. Lush, sweet, concentrated and mouthfilling; not nearly as porty as the basic cabernet, with seamless dark fruit flavors showing more energy and depth than the regular bottling. The finish is smoothly tannic, chocolatey and very long. Like a liquid confection, even at this early stage: this really saturates the mouth. This is so sexy now that it's hard not to wonder whether the wine's potential flavor complexity has been compromised by its uncanny early sweetness.
