About Domaine de Chevalier

Domaine de Chevalier sits in a clearing in the middle of a forest in Léognan, south of the city of Bordeaux, in the Pessac-Léognan appellation. The surrounding trees help protect the vines from temperature extremes, giving the estate the feel of a secret garden that produces wines that are equally magical. It is one of very few Bordeaux estates called a "domaine" rather than a "château," and it is ranked as a Cru Classé for both its red and white wines in the Classification of Graves. Since 1983, the estate has been owned by the Bernard family.

Domaine de Chevalier is known for both red and white Bordeaux and for some of the finest winemaking in the region. For the white wines, every stage of winemaking takes place in barrel. After a slow, gentle pneumatic pressing, the juice goes directly into barrels in temperature-controlled rooms. Over many years of experimentation, the team has found that the final blend is always better than any individual barrel, and regular bâtonnage helps achieve the ideal richness and silkiness.

Once the white grapes are harvested, the red harvest begins. Triple sorting is key to quality, as is keeping the berries as intact as possible. Gravity flow fills the stainless steel vats so the wine is not disturbed by pumping, and after fermentation and maceration the wine flows into new oak barrels for malolactic fermentation. Blending is done to highlight the terroir along with complexity, finesse and elegance. The grand vin is aged for 14 to 24 months with 40% to 60% new oak, while L'Esprit de Chevalier spends about 12 months in older barrels.

Beginning in the 1990s, the Domaine de Chevalier team extended its expertise to other properties, including Domaine de la Solitude in Pessac-Léognan, Château Lespault-Martillac and Clos des Lunes, bringing the same values and winemaking approach to new terroirs.
