Sauternes is the world-renowned sweet wine appellation in the southern part of Bordeaux, France, located along the Garonne and Ciron rivers, where morning mists and warm afternoon sunshine create the perfect conditions for the development of Botrytis cinerea, or noble rot. This beneficial fungus concentrates the sugars and flavors in the grapes, primarily Sémillon, along with smaller proportions of Sauvignon Blanc and Muscadelle, resulting in lusciously sweet yet remarkably balanced wines.
